Tori subji

Tori/ turai / ridge gourd / dodke in Marathi is a simple yet highly nutritious vegetable. It's low calorie, low sugar and high in vitamin, mineral and fibre content. Cooking instructions

* Step 1

First, grate the peels of ridge gourd and reserve them for making chutney. Then cut them into cubes.

* Step 2

Heat an iron kadhai. Add oil. When it heats up, pop the mustard and cumin. Then saute the onions, ginger and garlic, chilies till aromatic.

* Step 3

Then add hing, curry leaves, and turmeric powder and stir well. Then add some hot water and let the spices cook. Let the water evaporate a little.

* Step 4

Then add in the vegetable pieces and mix well. Add 1/2 to 3/4 cup hot water. Cover and cook till done. Add extra hot water if needed.

* Step 5

When the pieces become soft, mix chili powder, coriander powder, garam masala, amchur powder, and jaggery in 1 tablespoon of hot water. Add to the subji.

* Step 6

Stir and cook for 1 minute. Then add peanut powder, salt, and half of the coriander leaves

* Step 7

Adjust the seasonings. Cover and cook for 1 to 2 minutes. Then serve piping hot, garnished with fresh coriander leaves. Serve with hot chapati, bhakri or gakar roti as I have served. Enjoy!!
