Dahi bhindi masala

This is delicious and lightly spiced and tangy bhindi recipe.
Cooking instructions
* Step 1
Wash and dry up the bhindi well. Slit them and cut them into two pieces. Then add a pinch of turmeric and salt coated well. Take curd in a bowl add coriander powder, turmeric powder, and Chilli powder mix well. keep aside.
* Step 2
Heat oil in a wok or kadhai add the bhindi and stir fry for 3-4 minutes. transfer in a plate. keep aside.
In the same oil add fenugreek seeds, mustard seeds, and asafoetida and saute for 30 seconds.
* Step 3
Add chopped onion and saute until they turn light brown add ginger garlic paste and saute a few seconds. Add chopped tomato and salt and cook on medium flame until tomato turns soft and oil comes up.
* Step 4
At this stage add curd spices mixture. Stir and cook for a minute add fried bhindi and mix well with spices.
* Step 5
Add some water, cover, and cook for 5-6 minutes on low flame. after that open, the lid add garam masala powder, and cook for 2 minutes on high flame. Dish out and serve with roti or paratha.
