Multipurpose Soya Filling

We have many dishes which need filling inside them. They may be buns, braided bread, samosas, parathas, kachoris, puris, savory cakes, rolls, and so on. The list is long. So in this recipe, I've made a healthy soya nugget-veg filling for the purpose. And the interesting part is that you may store it in the fridge for 5-6days and in the freezer for about 10 days.

Cooking instructions
* Step 1
Soak soya nuggets in warm water for 6-8 minutes. Squeeze extra water and grind in a grinder. Keep aside.
* Step 2
Heat oil in a pan, add cumin seeds when crackle adds chopped ginger and chopped green chilies. Saute for few seconds.
* Step 3
Add all vegetables and ground soya nuggets.Stir.Add 1 tbsp water cover and cook on low flame for 2-3 minutes. Do not overcook.
* Step 4
Open the lid and saute, dry water if any. Add chopped coriander leaves Nix well. Put off flame and let the mix cool down.
* Step 5
When cool, use in your desired snack or store in an air-tight container in the fridge. Soya filling is ready to use. Happy cooking.
