Spiced Pumpkin Bundt Cake
Extremely soft and moist pumpkin cake this winter..Adding all the masala chai spices in the cake made it taste delicious. This spiced Pumpkin Cake was surely one of my perfect bakes..

Cooking instructions
* Step 1
Take oil, granulated sugar, vanilla extract and curd in a big bowl. Mix well. Time to seive in all the dry ingredients. Seive flour, baking powder, baking soda, salt and cinnamon. Add grated pumpkin.
* Step 2
Add grated pumpkin, freshly grated ginger and nutmeg in the batter. Preheat the oven at 180 degrees for 10 minutes. Prepare a batter with hot water and pour it in greased bundt tin.
* Step 3
Bake it in a preheated oven at 180 degrees for 35 minutes. Super moist and flavourful pumpkin cake is ready... Enjoy warm with your cup of tea and coffee..
* Step 4
➡️Cake has to be baked in a preheated oven at 180 degrees for 35 minutes or till when the toothpick comes out clean (+2minutes)
It can be made in a microwave..Microwave on high for 11 minutes.
In the absence of oven, the cake can be baked in a preheated gas tandoor or regular kadhaai.
* Step 5
➡️Why granulated Sugar here?
Granulated Sugar have coarser grains as compared to Castor Sugar or fine powdered Sugar. It does not incorporate into the batter quickly. But here, when granulated sugar caramelise while baking enhance the flavour of the cake.
* Step 6
➡️Amount of sugar can be adjusted as per taste buds.Usually pumpkin puree is added to the cake batter, but this time I added grated pumpkin.The cake turned out exceptionally delicious and moist..
