Fruit cake

#oven Eggless fruit cake.. Extremely delicious and flavorful which can be tried any-day.. Process like Christmas fruit cake but rum replaced by cranberry juice..

Cooking instructions

* Step 1

Soak raisins, apricots, cherries in cranberry juice for minimum an hour.

* Step 2

In a big bowl, add 1/4 cup oil and mix well with powdered sugar.

* Step 3

Then add curd and vanilla essence. Give a good mix.

* Step 4

Sieve in flour + baking soda, cinnamon powder, salt and baking powder. Add the soaked cherries and cranberry juice in it.

* Step 5

Mix with light hands. Add tutti frutti and chopped nuts in it. Maintain the consistency of the batter by adding milk into it.

* Step 6

Pour the batter in a greased loaf tin, sprinkle some nuts and cherries on the top. Bake it in a preheated oven at 180 degrees for 45-50 minutes or until the toothpick comes out clean.

* Step 7

Let it cool, demould and cut the cake and store in an airtight container.
