Ingredient

1/2 kg

gol bengan

1-2 tbs

oil

1 inch

ginger

8 cloves

garlic

1-2 tbsp

mint leaves

1 tsp

salt

2 tbsp

olive oil

Cooking instructions

* Step 1

In a pan heat up oil and add onions garlic and ginger and stir fry for 2-3 minutes

* Step 2

Now add green chillies coriander mint leaves and let it cool and put it in a chopper bowl

* Step 3

Add cumin powder salt carom seeds turmeric chilli powder and whole spice powder and blend it well

* Step 4

Pour it into a bowl and add gram flour mix well and keep aside

Take eggplants remove their leaves and give a cross cut

Now in a pan add olive oil and place these stuffed egg plants on it and cook on a very low flame for 30 minutes and keep changing sides

Garnish with coriander and serve with chapati or boiled rice
