Use-up French bean, etc. Soup

Yesterday’s fresh greengroceries delivery meant that I had some French beans plus a few other bits and pieces slightly past their best. This soup can be whizzed smooth but we prefer with this type to leave the vegetables in bite-sized chunks. So, another almost-free meal for the colder weather. #WastenotWantnot #lunch

Cooking instructions

* Step 1

In a stock pot or large saucepan fry the onion on a medium-high heat for 3 minutes, only stirring to avoid sticking.

* Step 2

Gently stir in the garlic, then the chilli and fry for a further minute. Add the celery, stir gently but thoroughly and cook for a further 2 minutes, stirring occasionally.

* Step 3

Add the French beans, potatoes and carrots and cook for a further 2 minutes. Gently spoon the vegetables to the side of the pan and add it the optional sherry if using.

* Step 4

Stir in the tomato purée and dried oregano. Then add the stock and bring to the boil, gently but thoroughly stirring.

* Step 5

Reduce the heat, cover and simmer for 20-25 minutes until the vegetables are cooked but not over-soft.

* Step 6

Season to taste (if using a stock cube or powder salt may not be needed), stir in the rosemary and serve piping hot with the bread of your choice.
