Swift Use-up Cooked Christmas Vegetables Soup

Rather than heat up yesterday’s uneaten vegetables or (shock, horror!) throw them away, I’ve made a light lunch to fit in between our good breakfast and forthcoming substantial dinner. Using the soupmaker meant only 5 minutes prep, then I pushed the start button and went for a nice hot bath!

Cooking instructions

* Step 1

Put all the ingredients apart from the seasoning in the soupmaker.

* Step 2

Put the lid on, push the button and do something else or rest until the machine bleeps (20-22 minutes).

* Step 3

Season to taste but note that you might not need any salt depending on your stock cube or powder.

Heat up when you’re ready, adding optional garnish of wanted, and serve piping hot with your choice of bread.
