Rustic Spaghetti with Prawns & Chili
Lockdown meant we had no fish for Good Friday but prawns were in the freezer and the other ingredients in the larder and fridge. I had some fresh spaghetti to hand but otherwise would have used dried pasta.

15-25 minutes including prep
Cooking instructions
* Step 1
Get a pan of salted water on the boil. Cook the spaghetti according to instructions for sufficient time to reach al dente by step 5 below. Then drain off the water through a colander. Add the butter and swirl.
* Step 2
Heat the olive oil in a frying pan to a medium-high heat. Add the garlic and fry, gently stirring, for 1 minute.
* Step 3
Add the chili and continue to fry and gently stir for 1 minute.
* Step 4
Stir in the tomatoes, sugar and white wine and cook for a further 2 minutes, continue to gently stir.
* Step 5
Stir in the coriander and lime juice. Then immediately add the prawns and continue to stir for about 90 seconds, until the prawns are heated. Remember that they are already cooked, so you only need to heat them through.
* Step 6
Add the drained pasta, stir thoroughly to coat the pasta with a little sauce and serve immediately onto warmed plates/pasta dishes.
