Roasted Butternut for breakfast
Cooking instructions
* Step 1
Preheat oven to 190 degrees C.
* Step 2
Wash thoroughly the butternut. Using a large knife, cut your butternut squash in half lengthwise. Scoop out the seeds and stringy bits from each half and discard (or save for roasting).
* Step 3
Transfer the butternut squash, cut-side up into the oven tray and brush with vegetable oil, coating the entire surface of the squash. Season with salt, pepper and rosemary.
* Step 4
Roast in the oven for approximately 45 minutes, or until soft, and fork-tender.
* Step 5
Remove from oven and allow to cool. enjoy
