How to ‘flavour’ a brand new Bialetti - or moka express. The Italian trick

Something that will never be missing in an Italian household is a Bialetti. In fact I know a lot of people that pack one in their suitcase wherever they go. In England they don’t seem to be that common for some reason but if you are interested in getting one here is how to use it. If you use it right away as normal you will find that the coffee has a quite metallic taste so here is how you give it a nicer flavour.

Cooking instructions

* Step 1

Start by taking the Bialetti apart and rinsing each of the 3 parts. How you can get these in multiple sizes but I would recommend going for a 3 person one as it’s a good decent size to start with.

The you fill the bottom part with fresh water until the middle of the noodle on the side is covered. When you put the filter on top don’t press it, just let us sink slowly and if water comes through the holes you have put too much water in. Remove some water and try again.

Then we fill the filter with round coffee. Never press the coffee down hard with a spoon as the water will struggle to filter through to the top.

Put it on the hobb on medium to low heat. You’ll know that the coffee is ready when the moka starts to make its typical growling noise. Turn off the heat immediately so that you don’t burn the coffee. Pour the coffee in a cup and set aside.

If you have a gas hobb chances are that the Bialetti might be too small for the metal parts. I would recommend getting these hobb reductions that you see in the picture. I got mine from amazing for close to nothing and that’s what all families have in Italy**

Put the moka pot under cold water so that it cools down. Take it apart and wash the moka pot by throwing away the used ground coffee, and rinse everything under cold water and don’t forget the bottom of the top bit where the filter is

Now we take the hot coffee that we just made and put it in the bottom part where previously we had put water. This is not something that you would ever do again when making coffee really, it’s only a speedy way to flavour the Bialetti. This time don’t put any coffee in the filter, close it and put it back on the hobb on medium/low heat.

* Step 8

Repeat step 5-6 one more time and voilá. Now the more you use it the more it will get the right flavour but this is a quick and easy way to get the Bialetti started without having to sip the metal-tasting coffee.

* Step 9

Throw away the coffee when done. Start fresh and enjoy your lovely Italian coffee
