Rusk Cake نان سوخاری
Do you remember Rusk cake? It is one of nostalgic childhood goodies in Iran. we call it: Naan-sokhari نان سوخاری or shrini sokhari شیرینی سوخاری in Iran. It’s made from flour, sugar, butter, eggs and ….. Shirni sokhari is the another version of Italian Biscotti. I love both of them.
Shirni sokhari or Rusk cake is a crispy, dry and hard (not toooo much)biscuit or three times baked cake. They are really tasty and goes well with a cuppa (chai) tea or coffee.
Nan sokhari, will last for ever !!! yes if you store them in an airthight container, they will last for a longggggggggg time.

Cooking instructions
* Step 2
Preheat oven to 180C degree. Grease the baking pan and keep aside.
Crack eggs in a bowl and beat them. Then add icing sugar, and keep beating until pale. Next, add butter and vanilla extract and beat till incorporated.
* Step 3
Sieve the flour and baking powder into the mixture and mix until well combined.
* Step 4
Pour the batter into the prepared baking pan and place it in the oven. Bake it for 30 minutes.
* Step 5
Then remove the cake from the oven, allow to cool. Remove it from the pan and cut it into slices or pieces.
* Step 6
Now, arrange them on the baking tray and bake slices for 15 minutes. Finally, flip the slices and bake again for 15 minutes.
