Persian meat patties with yellow split peas (Cutlet)
Cutlets are Persian meat patties and is different from lamb cutlets. But you have choice of different meat (beef - lamb- veal). It is super delicious Persian ground meat patty. It looks like hamburgers BUT made either with raw/cooked potatoes or chickpeas or split yellow peas. It can be served either with flat breads or steamed rice. Both are equally yummy.
Cooking instructions
* Step 1
Grate onion and squeeze it to get rid of onion juice. Set it aside.
* Step 2
Cook boil yellow split peas.
* Step 3
Mash it properly. Set it aside.
* Step 4
Place grated onion in a bowl,add meat,spices
* Step 5
Egg and season with salt and pepper. Mix and knead the mixture very well.
* Step 6
Add mashed yellow split peas
* Step 7
And mix all ingredient well. Refrigerate it for an hour.
* Step 8
Take one spoonful of mixture in your palm and form round or flat shape.
* Step 9
After shaping cutlets, dip them in the flour or bread crumbs and coat both side of cutlets with flour / bread crumbs.
* Step 10
Heat the oil in a frying pan. Set cutlets in the pan. Fry each side for about 7-8 minutes or until brown. Then, flip over and let cook other side as well. Serve it salad and pickle.
