California Farm Drying Mushrooms in Air Fryer
An inexpensive way to quickly preserve mushrooms, you will never run out of mushrooms again, and they taste just as delicious and fresh when cooking. Most satisfying for seasonal mushrooms, so you can cook with them year round.

Cooking instructions
* Step 1
Only buy perfectly clean and fresh mushrooms, no blemishes or dirt, no wet spots. If cleaning is needed, use a paper towel. Do not use water, it allows bacteria to grow. Start drying as soon as you get home.

Dont use water, or wet hands
* Step 3
Dont use oils or fats that touch the mushrooms.
* Step 4
Dry in slices if the mushrooms are bigger, they take less time than whole mushrooms. I use a mandolin slicer and slice big mushrooms at 1/2” thick settings. Slice caps on the vertical, slice stems in 1/2” rounds.
* Step 5
Preheat air fryer to 150F degrees. Put up to 80 mushroom on 2 dehydration racks, dry 2 hours. Make sure the mushrooms do not touch, or they might not dry well.
* Step 6
Do the cracker test to check if the mushrooms are dry. Take between your fingers, bend, the mushroom should crack in two, not bend.
* Step 7
Dried mushrooms weight only ten percent of fresh mushrooms, but have the same volume and need the same space dried as fresh.
* Step 8
Cool completely, then put in airtight containers. I use zip lock gallon freezer bags. One bag can hold 100 dried mushrooms. Store in cool and dark pantry. If not totally dry, freeze. Label and date. Good for several years. Takes 15 minutes submerged in lukewarm water to turn plump again. I push the mushrooms underwater with a sieve in the pan on top of the mushrooms.
