Creamy Carrot Soup
This creamy smooth, slightly sweet soup is a terrific way to get loads of healthy veggies into your picky eater. Serve it up with their favorite grilled cheese or PB&J. I'mein making a big batch to vacuum seal in single servings for the freezer.

Cooking instructions
* Step 1
In large soup pot over medium heat, add oil, carrots, onion, celery, and seasonings. Cook for 20 minutes, stirring occasionally.
* Step 2
Stir in broth and zest. Bring to a boil. Reduce to low. Cover and simmer for 30 minutes until carrots are tender.
* Step 3
Blend with an immersion blender until smooth. Stir in orange juice. Remove from heat. Stir in cream.
* Step 4
Taste for seasoning and add more salt & pepper, to taste, if desired.
* Step 5
Serve hot, topped with croutons.
