Grilled Rib Eye With Stilton Butter
My brother Joe adapted this recipe from a similar one of Bobby Flay's. Joe would beat Bobby Flay with this one! Even people who don't like blue cheese love it!

Cooking instructions
* Step 1
On stove or grill, heat a large cast iron skillet to high heat.
* Step 2
In a bowl, combine the butter, cheese, and thyme and season with salt and pepper, to taste. Cover the bowl and refrigerate for 30 minutes.
* Step 3
Brush the steaks with a bit of oil and season with salt and cracked black pepper.
* Step 4
Char the steaks on both sides on the grill then transfer to cast iron skillet (or char in skillet if cooking on stove). Continue cooking to medium rare doneness.
* Step 5
Remove from heat, leaving steaks in skillet. Top with Stiltson butter and sauteed mushrooms. Let steaks rest for 5 minutes before devouring.
