Street cart style chicken bowls
Cooking instructions
* Step 1
Prep your chicken by mixing the diced chicken pieces with some olive oil and then add your spice blend. Mix and let sit in fridge until you’re ready to cook it.
* Step 2
In a sauce pan, add your rice and some olive oil and cook for a couple minutes. Then add 2 cups of water and the chicken stock concentrate and mix well. Bring to boil, cover, turn down to low and let simmer for 20 minutes.
* Step 3
Then, on the stove top, in a skillet, add olive oil and the whites of your chopped green onions. Cook for about a minute on medium heat and then add your chicken and stir together, cooking thoroughly.
* Step 4
Next, make your white sauce. Combine the sour cream, mayo and garlic powder. Stir together.
* Step 5
When rice and chicken are done, add to your plate; chicken, rice, pita triangles and a scoop of tomatoes. Drizzle white sauce over everything and sprinkle the green onions over the top!
