Tomato and avocado on toasted bagel with grated egg
One of my favourite kitchen utensils is a microplane. It looks like a chisel but finely grates and zests ingredients with incredible ease! I normally use it for Parmesan or citrus fruit but thought I’d try something different.

Cooking instructions
* Step 1
First boil your egg. You want it to be hard boiled so you can grate it. Add a medium egg to a pan of boiling water for 6 minutes and 30 seconds. Allow to cool completely
* Step 2
Next, peel the egg and grate onto a plate. Meanwhile halve and toast your bagel
* Step 3
Drizzle the toasted bagel with a little olive oil. Halve your avocado and slice. Slice the tomato. Add the avocado and tomatoes to the bagel, season and drizzle the tomatoes with a little red wine vinegar
* Step 4
Add the rocket, grated egg, season and enjoy!
