Mussels for quick lunch (w/ white wine, chilli + parsley)
What to do when there are fresh, in-season mussels - make fast food, French-style... 30 mins and it's ready and on the table 😍

Cooking instructions
* Step 1
Prep your mussels by soaking in salt water and discarding any shells that stay open after tapping gently on a surface. De-beard if necessary.
* Step 2
Grate the tomatoes on a box grater, discarding the skins.
* Step 3
Peel and finely slice the shallot and garlic and chop the chilli (if using).
* Step 4
Heat the oil or butter in a large pan (one you have a fitted lid for).
* Step 5
Add the wine and tomatoes, season with black pepper, then cook for a couple of mins.
* Step 6
Add the mussels and cover tightly with the lid. Leave them to steam over the heat for 3-4 mins until the shells have opened, shaking the pan occasionally.
* Step 7
Serve up with a spare bowl to discard the empty shells. Great with bread to soak up the juices.
