Roasted sardines with herby date + bulgur salad
Roasted sardines are the most simple, delicious (and fairly cheap!) fish to cook, so I decided during a wet weekend to make a bit of a Med-inspired lunch.

Cooking instructions
* Step 1
Preheat the oven to full whack (240C)
* Step 3
Reduce the heat to a gentle simmer and cook with the lid on until tender and the water has been soaked into the grains completely (about 15 minutes). Check occasionally and top up with boiling water if needed.
* Step 4
Wash and pat-dry the sardines with kitchen paper. Place in a roasting tin.
* Step 5
Peel and finely grate the garlic, and add the marjoram or oregano, lemon juice, olive oil and a good pinch of salt and pepper.
* Step 6
Place the sardines in the oven for 15 minutes, or until the flesh flakes away easily. Meanwhile...

Finely chop the dates and place in a bowl with the raisins. Pour over boiling water and leave to soak for 10 minutes.
* Step 8
Very finely chop the parsley, mint, pepper and chilli, then place in a large bowl with the salad leaves.
* Step 9
Once cooked, add the bulgur to the salad bowl. Drain and add the dates and raisins.
* Step 10
Mix the dressing ingredients together and pour into the bowl, toss well.
* Step 11
To toast the almonds, place in a small frying pan over a medium heat and toast until golden (about 2 minutes).

To serve, pile the bulgur salad onto plates and sprinkle over the toasted almonds. Serve alongside the roasted sardines with wedges of lemon.
