Roasted rhubarb with orange

Forced rhubarb is in season now. Such bright pink stems in the grocers!

Ingredient

500 g

rhubarb

4 tbsp

sugar

Cooking instructions

* Step 1

Preheat the oven to 180C.

* Step 2

Wash the rhubarb and trim off any rough ends.

* Step 3

Slice into lengths, about 1 inch.

* Step 4

Put in a baking dish, sprinkle over the sugar and orange zest and squeeze the juice on top.

* Step 5

Mix together, then arrange the rhubarb in a single layer.

Cover with baking paper (or foil) and bake for 20 to 25 mins or until the rhubarb is falling apart and jammy. Give it a stir after 15 mins.

* Step 7

Enjoy with rice pudding, your breakfast porridge or yoghurt.
