Jack's heartbreak eggs

My brother is home for Christmas and as he's suffering from a bit of heartbreak and not making time to cook or eat, I made him some eggs for breakfast. I found some leftover cubed potatoes and leeks from Boxing Day and put those in the pan too which he liked very much.

Ingredient

10 minutes

Cooking instructions

* Step 1

Put a frying pan on a medium-high heat with a splash of oil.

* Step 2

Once hot, crack in the eggs, season with sea salt and black pepper, and cook for about a minute so they get a bit crisp underneath.

* Step 3

Turn the heat down a little. You can add some leftover cooked potatoes and leeks, or even Brussels sprouts or any Christmas veg leftovers. Chuck in some turkey, go mad!

* Step 4

Cover the pan and cook gently until the whites are opaque and the yolks cooked to you (or your brother's) liking.

* Step 5

Eat immediately on buttered toast.
