Spinach and feta filo parcels
I made these as a snack to enjoy while watching the 6 nations rugby on tv. They were really quick and easy to make with one eye on the game and the feedback I got for taste was very positive. Multiply the recipe according to how many mouths you have to feed. I got my inspiration for these from the ingredients I use for my spinach and feta filo pie but added sweet chilli sauce at the request of my husband which worked really well. Yum!

Cooking instructions
* Step 1
Preheat the oven to 180 degrees and boil a kettle of water.
* Step 2
Wilt the spinach by putting it In a colander and covering it in boiling water. Then squeeze out as much of the water from the spinach as you can. Transfer it to a board, roughly chop it and put it in a mixing bowl.
* Step 3
Add the finely grated garlic, lemon zest and juice, finely chopped chives, crumbled feta, sweet chilli sauce and some seasoning. Mix everything together.
* Step 4
Melt about 50g butter in the microwave (you might need more depending on the size of your filo sheets). Cut each filo sheet into three long strips.
* Step 5
Now assemble your parcels by putting a teaspoon full of mixture in the corner of one of the strips of filo. Fold the pastry in a triangular movement, until you run out of pastry. Brush the pastry with butter as you go. You should end up with 8-9 parcels. Put them on a baking tray ready to go into the oven.
* Step 6
Place in the oven for 20 minutes, until golden, flipping half way through. Remove, cool and enjoy.
