Leftover chicken pie
This is such an easy recipe and a great way to use up leftover roast chicken, or any cooked meat really. Because the chicken is already cooked, you need vegetables which cook relatively quickly, hence mushrooms being a great option. They give off a little bit of liquid which helps to create the sauce. #cookeverypart #leftovers

Cooking instructions
* Step 1
Preheat the oven to 180 degrees. In a large pan, slowly fry the onion until soft. Then add the garlic and fry for another minute before adding the mushrooms. Cook for 2-3 minutes until they start to sweat.
* Step 2
Add the kale and cook until starting to wilt. Then add the white wine and reduce. Finally all the cooked chicken, mustard, and creme fraiche, plus some seasoning. Then transfer to a pie dish.
* Step 3
Unroll the pastry, top the pie dish, trimming off any excess. Then prick some small stream holes in the top of the pastry and brush all over with egg.
* Step 4
Cook in the oven for 25 - 30 minutes or until the pastry is beautifully golden.
