Easy tomato and basil fregola

Easy tomato and basil fregola

This is a really nice and simple alternative side dish to rice or pasta and a great way to use up fresh tomatoes. I enjoyed it with some roasted veg and salad.

Cooking instructions

* Step 1

Finely chop the onion, garlic and tomatoes. Heat a tbsp oil over a medium heat and fry the onion and garlic until soft. Then add the tomatoes, add the sugar, seasoning and a splash of water.

* Step 2

Cool the tomato mix for about 20 mins until the tomatoes are soft, adding a splash of water when it’s looking dry.

* Step 3

Meanwhile, cook the fregola according to the instructions (approx 10 mins)

* Step 4

Going back to the tomato mix, add the fresh basil and chopped spinach.

* Step 5

When the fregola is cooked, drain it and add to the tomato mix. Serve with whatever you like.
