Indian spiced Halloumi and cauliflower rice
Roasted cauliflower is one of my favourites. I love how it develops a sort of sweet stickiness when roasted. I was inspired by a recipe from the Bbc good food magazine but I used roasted cauliflower instead of boiled. And I added mushrooms.

Cooking instructions
* Step 1
Preheat the oven to 180 degrees c. Cut the cauliflower into florets and coat in a little oil and seasoning. Roast in the oven for 25 mins or until soft and golden.
* Step 2
Heat a tsp oil in a frying pan. Add the red onion and fry over a medium heat until soft. Then add the halloumi and mushrooms and fry for 5 minutes until browning. Add the spices, garlic and ginger and fry for another minute.
* Step 3
Then add the rice, spinach, roasted cauliflower and mix everything together until the spinach wilts. Sprinkle with chilli, serve and enjoy ❤️
