I wanted a colourful accompaniment for my falafel wraps. I would have loved to make Middle Eastern pickled turnips but I had neither the turnips, nor the time. So, I made some pickled cabbage - it still tasted very good, albeit different. It just goes

Ingredient

Food ration :

2 people

Cooking time :

10 mins prep, 2 hrs infusing
100 ml

cold water

1 tsp

salt

2 tsp

sugar

Cooking instructions

* Step 1

Shred the red cabbage and put in a bowl with the other ingredients. Mix everything together, cover and leave to infuse for a minimum of 2 hrs, longer if possible.

* Step 2

Serve with whatever you like... I used it as an accompaniment to falafel wraps
