Langoustines. (aka Scampi)

A treat for myself, after spotting these in a supermarket. These are what Chip Shops sell as” Scampi” when coated in batter!

Ingredient

500 Grams

Langoustines

2-3 cloves

Garlic

500 mls

Fish stock

Cooking instructions

* Step 1

Wash the shellfish, to remove any seaweed etc, then add to a large saucepan.

* Step 2

Roughly chop the peeled onion and add to the pot, along with the peeled and crushed Garlic.

* Step 3

Add the stock and bring to the boil. Simmer for about 15-20 minutes gently to cook the fish.

* Step 4

To serve, strain away the liquid, then remove the tails. Break open the shell and consume the very tasty fish inside, yummy!!
