Enchilada Lasagne
A quick weeknight version of an enchilada layered like a lasagne.
Ingredient

2-3 servings
Cooking time :
25 minutes
Cooking instructions
* Step 1
Slice the peppers and onion.
* Step 2
Heat oil in frying pan. Add in onions and peppers and fry for 10 minutes.
* Step 4
Add in the beans, faijita spice, chopped tomatoes and season with salt and pepper. Cook for 5 minutes.
* Step 5
Stir in most of the coriander saving 1 tbsp for serving.
* Step 6
Add the tortillas to the microwave for 30 seconds.
* Step 7
Take 1/4th of the frying pan contents and add to the bottom of the caserole dish.
* Step 8
Add 1/5th of the soured cream and a tortilla.
* Step 9
Keep layering the bean mix, soured cream, tortilla until the last tortilla.
* Step 10
Add the final 1/5th of the sour cream and sprinkle over the cheese. Pop in the grill for 5 minutes.
* Step 11
Add the final coriander and serve.
