Pulled Aubergine Tortillas

Pulled Aubergine Tortillas

Great slow cooker recipe, possible to make vegan. We ate them so fast I forgot to take a photo of the final dish, again.

Cooking instructions

* Step 1

Heat a large frying pan with oil.

* Step 2

Cut the aubergines in half and add to the frying pan cut side down for 5 minutes.

* Step 3

Once browned add the aubergines to the slow cooker cooked side up.

* Step 4

Add in the BBQ sauce, brown sugar and tinned tomatoes. Season. Cook on low and slow for 6 hours or high for 3.5 hours.

* Step 5

40 minutes before serving take out the aubergines and shred with a fork.

* Step 6

Add the aubergines back in with the coleslaw and beans. Cook on low for 30 minutes.

* Step 7

Serve in a warm tortilla and drizzle with a bit of soured cream or mayo.
