Welsh Amber Tart
Traditional Welsh bitter citrus tart, tasty for an afternoon lunch with a cup of tea.

Cooking instructions
* Step 1
Sift 200g of flour and a pinch of salt in a bowl.
* Step 2
Add 100g butter and mix with your fingers until it looks like crumbs.
* Step 3
Add 2 egg yolks and 4 tbsp cold water. Combine into a pastry, use more water if needed.
* Step 4
Greese or line tart dish.
* Step 5
Roll out pastry on a lightly dusted surface to be about 1/2cm thick.
* Step 6
Add pastry to the dish, leave the overhang. Pop in the fridge for 20 minutes.
* Step 7
Preheat the oven to 170 fan.
* Step 8
Prick the pastry base with a fork.
* Step 9
Line with greaseproof paper and then top with baking beads or rice.
* Step 10
Pop in the oven for 10 minutes.
* Step 11
Remove the rice or beads and greaseproof paper and return to the oven for 5 minutes.
* Step 12
Trim the excess pastry off.
* Step 14
Add 3 eggs, 3 egg yolks, 115g caster sugar, 3.5 tbsp grapefruit marmalade and the melted butter into a bowl.
* Step 15
Squeeze about half a lemon into the bowl.
* Step 16
Whisk all the ingredients and pour into the pastry case.
* Step 17
Bake in the oven for a further 20-35 minutes.
* Step 18
Serve, optionally with cream.
