Peanut Cucumber Salad
Cooking instructions
* Step 1
Chop the cucumbers into quarters lengthwise and then into ½-inch chunks, toss cucumbers with 1/2 teaspoon salt in a colander. Set aside to drain.
* Step 2
Add the peanut butter, soy sauce, rice vinegar, maple syrup/brown sugar, chilli flakes/oil and garlic to a small bowl. Whisk the ingredients until they are smooth. Add a few drops of warm water if the dressing is too thick.
* Step 3
Roughly chop the peanuts and coriander
* Step 4
Wash excess salt off cucumbers and discard any water that has drained. Toss the cucumbers in peanut butter mixture
* Step 5
Sprinkle with coriander and peanuts before serving
