Heavenly Hot Cross Buns

Heavenly Hot Cross Buns

IMP (International Masters of Publisher's) Grandma's KITCHEN/ Old-Fashioned Breads . Why buy them at the Baker's or Shops when you can make them yourself if you have a working oven at home . Be sure too make some or buy some close to the Easter Period

Cooking instructions

* Step 1

Sift the flour, salt, spices and brown sugar into a mixing bowl. Rub in the fat with your fingers

* Step 2

Mix the yeast with a little of the milk and leave until frothy. Make a well in the centre of the dry ingredients and pour in the yeast. Add the egg, fruit and remaining milk and mix together to make a smooth dough

* Step 3

Turn out the dough onto a floured surface. Knead for 8 minutes, until elastic. Place in an oiled bowl, cover with a damp cloth and leave to rise in a warm place for 2 hours, or until doubled in size

* Step 4

Turn out and knead for 2 minutes. Divide into 12 pieces, shape into buns and place on a greased baking sheet. Cover and leave in a warm place for 25 minutes, or until doubled in size. Preheat the oven to 200 oC/ 400 oF/Gas 6

* Step 5

For the paste, put the flour in a small bowl and gradually stir in half the milk and oil to make a smooth, thick batter. Spoon into a small piping bag fitted with a small plain nozzle. Pipe a cross on the top of each bun

* Step 6

Bake for 20 minutes until golden brown. Place the milk and sugar in a pan, bring to the boil and simmer for 2 minutes. Brush the buns with the glaze as soon as they come out of the oven. Transfer to a wire rack and cool slightly before serving
