Homemade Mayonnaise Red Onion Coleslaw

I made the Recipe up - with little experience and knowledge of making Coleslaws' . I did well not too add the Mayonnaise too early - for I made a large quantity of a large mixing bowl of Vegetables - did keep the thin slices of Vegetables in the Fridge and over about 5 days the Vegetables did release some Vegetable juice

Cooking instructions

If the Carrots are not fresh - then water soak the thin slices of Carrots in cold water several times throughout the day. Drain the cold water

* Step 3

* Step 4

Crack 4 medium to large hen eggs and then convert the egg yolks too your Kenwood Attachment Food Mixing Bowl and then attach the Kenwood Whisk Attachment - whisk for 2 minutes and then add the 6 teaspoons of White Wine Vinegar, or plain White Vinegar and then whisk for 30 seconds, or One minute and then add the One teaspoon of Table Salt - whisk for a further 30 seconds. Gradually add the Sunflower Oil whilst the Kenwood Food Mixer is on full power and then store in a Plastic Container with Lid

* Step 5

Use palm of Hand too convert thin slices of Vegetables into another very large Mixing Bowl (Kenwood Bowl is okay) and squeeze the moisture out of the thin slices of Carrots and then dispose of the Vegetable juice. Wash and dry your biggest Mixing Bowl then convert back into that large mixing bowl. Add a layer of homemade Mayonnaise and then put some more of those mixed raw Vegetables on top and then add another layer of the Mayonnaise - and so on
