Fish and potatoes stew/hotpot

Cooking instructions

* Step 1

Preheat oven to 200oC

* Step 2

Fry onion and garlic

* Step 3

Add tomatoes, 3 cans of water, vinegar, tomato purée, capers, sugar, salt and pepper and bring to the boil and simmer for 5min

* Step 4

While boiling, peel and slice (5mm thick) the potatoes and lay in dish. Make two layers

* Step 5

Pour the sauce over the potatoes, cover with foil and put in oven for 50 mins

* Step 6

Uncover and heat for another 40min

* Step 7

Stir and bury fish inside the juice. Put back in the oven for 40min
