Linguine, Ham, Leek & Mushroom

Simple pasta dishes are perfect for Six2go DIET meals (6 Ingredients prepared in less than 15 minutes). This one is specially simple as it uses readily available pre-cooked meat. Amazingly it checks in at just 185 calories and still boosts Over5aday intake by1½ portions per serving. Counts as an Over5days meal on the Pro52diet.

Cooking instructions

* Step 1

Put a pan of boiling water on to the hob to cook the pasta for 10 minutes or as directed.

* Step 2

Spray another pan with Spray2Cook, put on high heat until the Spray2Cook bubbles then turn down and add the leeks.

* Step 3

Spray the leeks some more whilst stirring then add the herbs and two tablespoons of boiling water from the pasta pan.

* Step 4

Allow the leeks to simmer for 4 minutes without drying out then add the mushrooms.

* Step 5

When the pasta is just to you liking add the cheese and ham to the leek and mushroom mix.

* Step 6

Add a little boiling water from the pasta if needed in order to mix well until everything is covered in the cheese “sauce”.

* Step 7

Strain the pasta well and add the leek mix. Mix everything well and serve in a warmed bowl.
