Camarones y Couscous

This is another of my DIET recipes that I have marked as “Six2go”. These recipes use 6 ingredients that I usually have to hand and take no more than 15 minutes to prepare and cook – i.e. less time than time than it takes to get a diet busting takeaway meal. In addition to the 6 ingredients I am allowed to use salt, pepper and “Spray2Cook” (a word I use to describe any low-cal. non-stick cook’s oil spray). Six2go meals help me stay on track when life gets busy. This dish contains1 portion of 5-a-day and 250 calories Counts as an Over5days recipe on the Pro52diet.

Cooking instructions

* Step 1

Dissolve the stock cube in 250 ml / 8½ fl. oz. of boiling water and pour over the couscous in a bowl. Cover and stand for five minutes then fluff up with a fork.

* Step 2

Heat a fry pan sprayed with Spray2Cook until the Spray2Cook bubbles. Add the arugula until it wilts (less than 1 minute), remove and add to the couscous, season with salt and pepper and mix.

* Step 3

Re-spray the fry pan cook the shrimp seasoning with pepper and the garlic salt as they cook. When pink serve on the couscous.

* Step 4

Sprinkle with lemon juice to taste.
