Hoisin duck stir fry with egg noodles

coriander

Soy sauce

Cooking instructions

* Step 1

Prepare - bring saucepan to boil for noodles. Remove core and seeds from pepper and cut into thin slices. Thinly slice shallots. Rough chop coriander and zest lime then cut in half.

* Step 2

Cook noodles until tender.

* Step 3

Shred the duck. Scrape off and discard any liquid or fat. Over a mixing bowl remove the skin with your fingers then pull the meat from bones. Discard the bones and skin. Break up meat.

* Step 4

Heat fry pan add Pepper and shallot. Lower heat to medium and add shredded duck.

* Step 5

Add hoisin sauce and stir well. Add noodles. Toss together. Stir in Soy sauce lime zest and splash of water and squeeze of lime juice.

* Step 6

Serve
