Melt the dark chocolate with 1/2 cup cream, let to cool, add to chocolate the 4 egg yolks one by one mixing well. Beat the 1.1/2 cup cream to peak. Beat the egg whites, halfway add the cream of tartar, a bit later add the castor sugar. Add had of cream to chocolate and half of egg whites, then the rest of cream- egg whites. When all combined spoon the moose to a glass bowl garnish as you like, leave it in refrigerator all night. Effie xx
