Flourless Carrot Cake from Tuebingen

Cooking instructions

* Step 1

Grate the carrots.

* Step 2

Whisk egg yolk with water and 2/3 of the sugar. Add vanilla sugar and 1/2 teaspoon of cinnamon.

* Step 3

Whisk the egg white into snow with little salt. Once firm add one-third of the sugar.

* Step 4

Add rum, carrots, hazelnuts to the whisked egg yolk. Mixed well.

* Step 5

Mix carefully with the egg white snow.

* Step 6

Use baking paper or smear the baking form with butter.

* Step 7

Bake at most temperature of 140 degrees Celsius for 60 minutes. Look at it at 25 minutes.

* Step 8

Create chocolate glaze or melt chocolate and cover the cake with it.
