Egg Plants with Potatoes and Minced Meat

(Can Delete the Meat for Veggie option or to use as a side dish)

Ingredient

750 Gr

Potatoes

1/2 Litre

Milk

Cooking instructions

* Step 1

Peel the Onion and dice, finely chop Garlic and fry until lightly browned. Stir in the meat until browned and add salt and pepper to taste. Remove from heat

* Step 2

Wash and Dry Aubergine and cut into 1cm disks. fry in oil until slightly softened. sprinkle with salt and pepper and allow to drain on kitchen paper.

* Step 3

Cook the potates Cubed in water, drain and add milk and make into a mash.

* Step 4

Wash Tomatoes and Slice.

* Step 5

Transfer Half the Mince and Onions (or just onions) into a dish, then half the mash and half the tomatoes and aubergines. then repeat making layers. on the top Arrange to make nice pattern.

* Step 6

Sprinkle with Salt, Pepper and Oregano, Sprinkle a little more oil over it and then sprinkle the grated cheese on top. Bake in Oven 200 Degrees C for about 30 mins
