diced onion

Cooking instructions

* Step 1

Sauté mushroom and onion in butter until carmelized, then puree

* Step 2

Boil giblets etc. pull skin off neck, purée all with mushroom onions

* Step 3

Put spice bag in pan with chicken broth, simmer 1 hour

* Step 4

Put 6 Tbl butter, add flour, cook for 3 min

* Step 5

Add chicken broth after removing and discarding spice bag

* Step 6

Add puréed mushrooms and onions

* Step 7

Sauté for 15 min serve hot
