Fish kabsa πŸ πŸ…πŸŒΏ

Fish kabsa is famous Arabic rice dish, I have twisted little, I made my kabsa with tuna pieces but originally it's made with white fillet fish,serve with fresh salad on the side, and enjoy.

Cooking instructions

* Step 1

Wash and clean fish pieces, pat dry with kitchen towel and keep aside. Soak rice and keep aside.add lemon juice πŸ‹ on the fish pieces and keep it for 15 mins.wash again and pat dry with kitchen towel and marinade.

* Step 2

Marinade the fish 🐠: in a bowl πŸ₯£ add yogurt, ginger garlic paste πŸ§„, salt πŸ§‚, kashmiri red chillies powder 🌢️, coriander & cumin powder, turmeric powder,black pepper powder,green chillies paste, kabsa masala and mix well, spread on fish pieces 🐟 cover and keep it for 30mins.

* Step 3

Shallow frying the pieces and keep aside, keep marinade mixture separate later add in the gravy.Heat oil, add ghee/ butter, add cumin seeds, bay leaf,star anise cook for 1 min, add finely chopped onions πŸ§…, cook until golden, add ginger garlic paste πŸ§„ mix well.

* Step 4

Add finely chopped tomatoes, salt πŸ… cook until mushy,add turmeric powder, marinade mixture, coriander & cumin powder, little finely chopped coriander leaves 🌿, kabsa masala and mix, cook until oil comes out. Add soaked rice and mix well, add water mix gently, let it boil, when rice is tender and soft, remove from flame.

* Step 5

To assemble: add cooked rice in serving dish, arrange fried fish pieces on top, garnish with fried onions and fried almonds and serve hot. Serve with simple leaf parsley salad.

* Step 6

For leaf πŸ‚ parsley salad: cut 2-3 onions into round, finely chopped leaf parsley mix gently, add salt πŸ§‚, black pepper powder, white vinegar 1 tbsp mix and serve with fish kabsa,If desired.
