Vegetarian Punjabi thali πŸŒΆοΈπŸ…πŸ‹πŸ₯”πŸ§…πŸ₯’πŸ«‘

Punjabi dishes are loved served universally for their richness and taste, mostly you have notice in Punjabi thali there are cottage cheese dish, like matar paneer masala, paneer butter masala and so on, but I decided to make my Thali with mixed vegetables sabzi, with simple ingredients found mostly in our homes, so enjoy this simple Punjabi thali on Sunday lunch with family and friends.

* Step 1

Note: if you like to make Punjabi lentil, it's kindly recommended to check spicy black gram dal/ lentil, for dessert, check 🌹 rose vermicelli kheer.

* Step 2

For mixed vegetables sabzi πŸ₯”πŸ…πŸ₯•πŸ§…: for time saving, boil potatoes, cauliflower, carrots, french beans, peas (don't boil green capsicum and pigeon peas). Heat oil add ghee, oil stir, add cumin seeds when start to crackle, add chopped onions πŸ§… cook until golden, add ginger-garlic paste πŸ§„, cook for 1 min, add chopped tomato πŸ…, tomato paste and mix, add salt, black pepper powder, kashmiri red chillies powder, coriander & cumin powder, yoghurt mix,cook until oil comes, add pigeon peas if using

* Step 3

Add all boiled vegetables, potatoes, cauliflower, carrotsπŸ₯•, french beans, peas and mix, cook until oil comes out, serve, garnish with fried onions, chopped coriander leaves.

* Step 4

For simple Punjabi πŸ₯— salad: cut onions πŸ§…, πŸ… tomato, cucumber πŸ₯’, green chillies, garlic cloves mix gently in a bowl, keep aside, for dressing : mix white vinegar/ πŸ‹ lemon juice,salt, black pepper powder, sunflower oil 🌻mix, pour on the salad and serve.

* Step 5

For Punjabi boondi yoghurt: whisk yogurt until smooth, add roasted cumin powder, Chaat masala, chopped coriander leaves, mixed herbs, ginger chopped, green chillies paste, salt, black pepper powder and mix, soaked boondi mix and serve.πŸ§„πŸŒΆοΈ

* Step 6

For Punjabi aloo tikki: soak Bengal gram, heat oil add cumin seeds, when start to crackle, add chopped onions πŸ§… stir, add soaked Bengal gram mix, add kashmiri red chillies powder, salt, chopped coriander leaves, chopped green chillies and mix, add cinnamon powder, cardamom powder mix, keep aside. in a bowl add mashed boiled potatoes, chopped coriander leaves, oil 1 tbsp, salt and mix, add corn flour/ rice flour and mix, make balls and make a hole in the center with your thumb.

* Step 7

Add the stuffing and make balls again, flatten the balls slightly, heat 4 tbsp oil and shallow fry them till brown and crisp and serve with Punjabi green chutney.

* Step 8

For Punjabi paratha:Ina bowl add wheat flour, dry fenugreek leaves, cumin seeds, chopped coriander leaves, salt, turmeric powder, kashmiri red chillies powder 🌢️, coriander & cumin powder, black pepper powder and mix, add water mix, dough is ready, make round paranthas and fry them with ghee/ oil, serve.

* Step 9

For Punjabi green chutney: add all the ingredients, in blender and blend, remove chutney is ready to serve.

* Step 10

For green peas rice: soak rice, Heat ghee saute spices, when the spices begin to sizzle, add slices onions πŸ§… & green chillies chopped mix and cook onions until deep golden, add ginger- garlic paste πŸ§„, cook for 1 min, then add green peas, finely chopped mint leaves saute for a min.

* Step 11

Add coriander leaves, add soaked / drained rice and fry on a slightly high flame for 3 mins, add salt, 1/2 vegetable cube and mix, add water give a good mix, let it boil, when half done, cover and cook on slow heat, check when rice is tender, serve.

* Step 12

Punjabi vegetarian Thali is ready to serve hot. Tip: you can serve cumin 🍚 rice with Punjabi thali, the choice is ours.
