Chicken with muslin sauce

I share with you on a lettuce leaf, a recipe for chicken papillote with muslin sauce and a garnish of mushrooms with cream and white wine. I hope you like it.

Cooking instructions

* Step 1

For the chicken, after gathering the ingredients, we peel and chop the garlic cloves and the natural parsley, put it in a bowl, pour in the EVOO and sprinkle the salt, mash it all together and reserve it.

* Step 2

We take out the aluminum sheets, spread them with butter, wash the breasts, paint them with the previous mash, put them on top of the sheets, close them hermetically and bake them for 20 to 30 minutes depending on their size.

* Step 3

We wash and cut the mushrooms to taste, chop the onion, fry it for 2' with EVOO, add the mushrooms, fry it for 4', pour in the white wine, let the alcohol evaporate, we pour in the cream, season to taste with salt and pepper, let it cook for 20' and reserve it.

* Step 4

We squeeze the lemon,melt the butter in a saucepan,separate the whites from the yolks and put the 2 yolks in a bowl with 2 tablespoons of water,heat water in a saucepan and we place the previous bowl on top,we beat it until we get a frothy cream, without stopping beating we add little by little the melted butter and the lemon juice,when we have the sauce,we season to taste, we beat it again,we take it out and we pour the liquid Cream,beat it again and we reserve it.

* Step 5

To serve the recipe, we wash the 3 lettuce leaves, we remove the white stems from below and put them on the plate, we take the chicken breasts out of the oven, we open the aluminum sheets, we put the breasts on top of the lettuce leaves, We distribute the mushroom garnish, pour the muslin sauce over the chicken breasts, decorate it to taste and serve it.
