Pistachio Cream Sauce for Pasta

A nutty, cream sauce that goes well with thick pastas, and with mushrooms or mushroom pasta (see this recipe: https://cookpad.com/us/recipes/271711-mushroom-pasta-dough).

1/2 cup

white wine

1/4 cup

pistachios

Cooking instructions

* Step 1

Blend oil and pistachios in a food processor until a chunky paste is formed.

* Step 2

In a large sauté pan, toast the pistachios and garlic until fragrant. Add white wine and reduce by half, scraping any bits stuck to the bottom of the pan if needed.

* Step 3

Add heavy cream and bring to a simmer. Stir in the parmesan until melted and sauce has thickened. Season with salt & pepper.

* Step 4

To serve add to freshly cooked pasta and toss to coat. Add pasta water if necessary to thin out a bit.
