Iron Skillet Potato Bake
LEFTOVERS! It’s kinda my thing. I basically made my Special Potatoes last night. Had a small crowd so I had leftovers. I dolled them up with some sour cream and cheese and a fried crust on bottom, compliments of my iron skillet and a hot oven. I would’ve used bacon but I used it up already. My Special Potatoes have a stick of butter in them so keep that in mind when you prepare. If necessary, add melted butter to the mix to really get the full effect lol

Cooking instructions
* Step 1
Preheat your oven to 425. Mix the potatoes with sour cream, 1 cup cheese, add ins, and season.
* Step 2
In an iron skillet, preheat olive oil on burner, and add potatoes to hot skillet. Spread them out. They should sizzle. Add the second cup of cheese on top and bake in oven for about 20-30 minutes or so til browned, bubbly and melty.
