Vegan Mexican Rice 🥦🥦🥦

Vegetable rice - with broccoli stalks - Mexican style! Veggie rice is a great recipe for using up all of your bits of veg, but it is particularly nice with broccoli stalks. I’m ashamed to say that once upon a time I threw my broccoli stalks away, but I learned from my Chinese take-way that they are the best bit! I usually serve this with my carlin pea chilli and vegan chilli toppings (see my recipes). It can also be adapted to my Chinese style ‘no egg’ fried rice. #useeverypart #fridgeforage

Cooking instructions

* Step 1

Heat half of your oil. Drain and cook the corn until it starts to char. Add the garlic and onions and cook until it starts to brown.

* Step 2

Add the rice and cook through. Push to the side of the pan. Add a splash of oil and cook your veggies to your liking. I like to flash fry to retain flavour abd texture.

* Step 3

Combine and add a shake of hot sauce. Chop the herbs and sprinkle. Squeeze with lime and serve with the wedge. It’s ready to serve!
