Greek Salad Pitta pizza ๐ŸŒฑ #feelgoodfood

Donโ€™t you just love it when taking about food leads to creativity and one idea leads to another. Evolving from my a chat with @sonia yesterday and my Vindaloo Pizza for the footie, here is my pitta pizza! Basically Greek salad on the outside of pitta rather than inside, but I donโ€™t like many vegan cheddar-style, so this works for me! Iโ€™ll include this recipe for homemade pittas separately (Iโ€™ve got a few from my international cooking group!) they are so easy to make, I was amazed! You may also like my Harissa recipe. #feelgoodfood

Cooking instructions

* Step 1

Warm your pitta if you are not making straight away. Top the pitta with crushed tomatoes or Harissa (if you are making for making for your own consumption ๐Ÿคฃ) Only a little or it will have a soggy bottom.

* Step 2

Finely chop the veggies and dress with a splash of oil and a squeeze of lemon juice (for flavour and help them keep a vibrant colour). Top with finely chopped veggies and the herbs on top. Add a little vegan feta, a drizzle of olive oil and a pinch of salt and pepper. Serve with extra dips if desired.
