(Imitation) Crab Quiche 🦀🥸

My mom gave me this recipe over 15 years ago and I’ve made it many times. It’s very versatile, and you can modify it according to your tastes. Which is good, because the cost of everything has been going up, up, UP lately. 😣 I’ve been trying to be more frugal with my meal preparations. Real crab can be used in this recipe, but it’s expensive. Imitation crab is a cheaper alternative. Not everyone likes Miracle Whip (but I do!) and I think its tangy/spicy flavor works well here. But mayonnaise will work, too. Do you really need the pie crust in this recipe? Probably not. However, I’ve never tried it without one, so proceed at your own risk.

Cooking instructions

Assemble your ingredients.

Whisk the eggs well.

Whisk in the Miracle Whip and ricotta cheese. Then whisk in the flour gradually.

Dice the imitation crab, the Swiss cheese, and the onion.

Add the crab, cheese and onion to the egg mixture, along with any spices you’d like to add.

Preheat oven to 350°F.

* Step 7

Place the unbaked pie crust into a 9” pie plate. Flute the edges, gently prick the bottom of the crust with a fork a few times, and bake for about 8-10 minutes.

Pour the filling into the pie shell and place back into the oven.

Bake for 40 to 45 minutes or until the filling is set and the crust is browned. Store in the refrigerator for up to 5 days. The quiche can be served warm or cold.
